Semolina is simply granulated wheat. tastes great and may be used to make a variety of savory recipes. In addition, it is versatile and rich in protein and fiber. Not just that. Additionally, it has minerals like magnesium, iron, folate, Vitamins, and more.


Ingredients


3 cups of semolina


4  1/2 cups coconut milk


3 tablespoons of oil


1/4 cup grated carrot


¼ cup  thinly sliced ​​leeks


¼ cup  chopped onion


2 tablespoons chopped tomatoes


1/2 cup of green peas


½  cup of chopped cashew nuts


2 teaspoons of each the green, red, and yellow bell peppers, finely chopped 


2 bay leaves


Salt to taste


Steps to roast semolina

First put 3 cups of semolina in a frying pan.


Fry the semolina on low heat for about 3-4 minutes until it turns very light brown in color.


Remember to keep stirring so it cooks evenly without burning the bottom of the pan.


Since the pan can stay hot for a long time after turning off the heat, once the semolina is completely fried, remove it from the pan and transfer the fried semolina to a plate and set aside.


Now preparing the veggie mix semolina


First, heat a pot and add oil.


After the oil is hot, add the chopped onions and let them fry.


Add bay leaves, carrots, leeks, green peas, chopped bell pepper and fry for 6-8 minutes.


Add salt to taste after adding the chopped cashews, tomatoes and continuing to sauté for a bit.


Finally, now add coconut milk to the mixture and cook it well for 3-4 minutes.


Then add the fried semolina and quickly mix well. If not stirred quickly, it will curdle.


If the semolina is lumpy even if you stir it quickly, break it with a spoon little by little. Now the veggie mix semolina is ready to eat and you can enjoy it.
